Kimchi Fried Rice
1 cup chopped kimchi. Ideally, use kimchi that has fermented thoroughly. Fresh kimchi can also be used but the flavor will not be as good for this recipe.
2 cup cooked rice that has been refrigerated overnight.
1 tbs vegetable oil.
2 tbs sesame oil.
Heat oil in pan and add in chopped kimchi.
Stir-fry kimchi for 2 minutes or until the desired amount of moisture has evaporated.
Add in rice and stir-fry until every grain of rice absorbs color from the kimchi.
Add sesame oil from the side of the pan.
You can also add some green onions for more color and freshness.
Similar to the braised quail egg recipe, this recipe was inspired by my obsession with K-dramas at the beginning of medical school.
