Tomato Butter Pasta
1 cup of chopped tomatoes
2 cups of dried pasta
2 tablespoon of olive oil
2 tablespoon of unsalted butter
Salt and sugar to taste
Garnish with fresh basil
Cook the pasta before making the sauce.
Sauce:
Add butter, olive oil, and tomato to a pot on medium heat.
Stir in pan until skins are completely separated from tomatoes and the sauce is thick. Season with salt and sugar to taste.
Turn off heat and add fresh basil and cooked pasta to sauce then stir.
Serve with some extra fresh basil.
Growing up, I didn't like to eat tomato based sauces because I thought the spices in tomato sauce was overpowering. I really love this recipe because it completely highlights the tomato without a lot of additional ingredients. Tomato eggs is my favorite tomato based dish, but this is a close second.
