Scallion Pancakes
Scallion Pancakes
Makes 2 pancakes with a ~3 inch diameter.
Dough:
All purpose flour: 2 Cups
Baking soda: 1 Tsp
Salt: 1 Tsp
Water: 1 Cup
Seasoned green onions:
Green onion: 6 Bulbs
Salt: 3 Tsp
Sesame oil: 3 Tbs
Adding a teaspoon of white or black pepper will also taste great and add a bit of heat.
Pan frying
Any cooking oil: 6 Tbs
Combine flour, salt, water, and baking soda.
Mix ingredients and knead dough. If dough sticks too much to your hands, add some more flour.
Let dough rest for 5 minutes under lid cover.
4. Make seasoned green onion by combining the green onions, salt, and sesame oil.
5. Divide the dough into two equal portions.
6. Roll dough into circular pancakes.
7. Spread the seasoned green onions onto the pancakes.
8. Roll up the pancake into a pillar.
9. Curl the pillar into a spiral.
10. Roll out the spiral so that it becomes a flat circle.
11. Add oil to pan.
12. Pan fry until golden (takes about 5 minutes both sides).
13. Use spatula to wrinkle the pancake or break it into small pieces.
14. Serve and enjoy.
My personal connection with the dish (我與菜的個人聯繫):
This dish holds so many memories for me because it was consistently the dish my mom would make for me to bring to potlucks and celebrations when I was in grade school. I was always nervous whether people would like it because, at the time, I only recently immigrated to America from Taiwan and I wasn't sure whether my new friends would like the food that I'm familiar with. Luckily, this dish has never disappointed and I (and my mom) received so many compliments because of this dish.
這道菜給我留下了很多回憶,因為這一直是我媽媽上小學時會帶給我的飯菜和慶祝活動的菜。我一直很擔心人們是否會喜歡它,因為當時我只是最近才移民到美國,而且不確定我的新朋友是否會喜歡我熟悉的食物。幸運的是,這道菜從未讓我失望過,我(和我的媽媽)因這道菜而獲得了許多讚美。
