Red Wine Lamb
2 pound of bone-in lamb cubes
Olive oil
1 large onion
2 ribs of celery
2 large carrots
1 bottle of red wine
1 tablespoon dried Italian herbs
Salt and sugar to taste
Cornstarch for thickening (optional)
In an instant pot, sear all sides of the lamb cubes. This should take a few minutes.
Add all the remaining ingredients except the cornstarch.
Cook at high pressure for one hour.
Add more salt and sugar to taste.
If you would like the consistency to be thicker, add some corn starch and stir.
