Knife Cut Noodles
2 cups flour
1 cup water
1 tablespoon extra flour at the end while rolling and cutting
Add the flour and water into a large bowl. Mix and knead with hands until you get a ball of dough. Cover and rest for 30 minutes.
Roll the dough into a large sheet, using extra flour to prevent the dough from sticking.
Fold the sheet into several layers, then cut.
Boil for 3 minutes and mix with your favorite noodle sauces. I like to just add sesame oil and oyster sauce.
