Dried soba noodles
Soba dipping sauce (can make your own by boiling soy sauce, sugar, and dried bonito flakes in a pot)
Optional: Dried seaweed or noodle toppings
Cook soba noodles according to packaging.
Rinse noodles with cold water using strainer.
Serve with green onions or eat plain.
To make the dipping sauce, boil 1 cup of water, 1/4 cup of soy sauce, 1 tablespoon sugar, 2 grams of dried bonito flakes. Add ice cubes or cold water to dilute to taste.
This is a really delicious meal during hot summer days. For a long time, I used the Kikkoman Memmi Soup Base as the dipping sauce. One day, I ran out but still craved the savory and smokey soy-based dipping sauce. I had some dried bonito flakes at home and decided to try making my own dipping sauce. It turned out to be very simple to make and tasted fantastic.
