Chicken and Clam Noodle Soup
Makes enough for a single bowl
Chicken: 1 can of pre-cooked chicken
Clams: 10 small clams
Green onions: 1 bulbs
Noodles: Taiwanese fresh noodles
Frozen vegetables (peas and carrots): 1 cup
Salt: add to taste
Broth
In a pot, boil 2 cups of water
Add chicken, clams, and frozen vegetables into the water
Boil until the clams open
Turn off heat and move on to cook noodles
Noodles
In a separate pot, cook the noodles to desired texture
Add the cooked noodles into the pot with the broth
My dad came up with this recipe, and I’m not sure if I would have ever thought of this recipe if he hadn’t shown it to me first. Prior to this dish, I have never combined chicken with clams. After tasting this dish, I discovered that the clams provide savoriness and the chicken makes it filling. Put these ingredients together and you have a hearty bowl of noodle soup.
