Tomato Eggs
Makes enough for a one person meal
Eggs: 2
Tomato: 1
Green onions: 2 bulbs
Cooking oil: 4 tbs
Seasoning: use whatever you want. I typically do 2 tsp of salt and have tried oyster sauce and found it to be really tasty too (thanks to Caroline H. for the recommendation!).
Heat up oil in the pan.
Add green onions and fry it up for 1 minute.
Add tomatoes in. Cook until tender or to your preferred texture.
Make space in the pan for the eggs, then add oil, eggs, and scramble the eggs.
Once the eggs are cooked to your preferred texture, add seasoning and then mix the tomatoes with the egg.
Serve and enjoy.
Growing up, I avoided tomato eggs with a passion because it was always cooked with ketchup by my family. I could not stand the taste or the aroma of ketchup. It wasn’t until middle school that I decided to make tomato eggs myself without ketchup. The result was a simple dish that I have grown to love and eat at least once a week now as an adult.
