Stir-Fried Clams with Basil and Garlic
Clams (fresh or frozen): ~40 clams or ~1 pound. Mussels work really well too.
Thai basil (2 cups fresh)
Green onions (2 bulbs)
Garlic (4 cloves)
Soy sauce (to taste)
Cooking wine (to taste)
Add cooking oil to a pan with some depth.
Add garlic and fry for a few seconds.
Add the rest of the ingredients in and cook until the clams open.
In Taiwan, there is a restaurant that sells all their dishes for $99 NTDs, which is roughly $3 USDs. One of the dishes they sell is this stir-fried clam dish. I can’t replicate the taste since they use fresher clams and real woks with greater heat, but I think my version tastes perfectly fine as well. Another thing that I can’t replicate is the unlimited watermelon juice that this restaurant provided for no extra cost to the customers.
