Steamed Fish
1 cleaned whole fish
Couple slices of ginger and scallions
2 tablespoon of rice cooking wine
Sauce
2 tablespoon soy sauce
1 tablespoon oyster sauce
2 teaspoon sugar
2 tablespoon water
1 tablespoon of rice cooking wine
Chopped scallions
Chopped Thai chili peppers
2 tablespoon of neutral oil
Pick out a clean and fresh whole fish. The fish should not smell overly fishy and the eyes should be clear.
Cut a few vertical lines in the fish to allow sauce to seap in.
Coat the fish with rice cooking wine.
Add slices of ginger and scallions inside the stomach of the fish and in the vertical cuts.
Steam for 15 minutes.
While fish is steaming, prepare the sauce by heating all the ingredients in a pan until it boils.
After the fish is done steaming, add the sauce on top of the fish.
Place raw scallions and chili peppers on top of the fish.
Heat neutral oil until it slightly smokes (be VERY careful to not get any water in the hot oil. I recommend using oven mitts for this step).
Add the oil on top of the scallions and chili peppers.
