Shanghai Scallion Oil Noodles
Scallions
Frying oil
Soy sauce
Sugar
Noodles
Wash and dry the scallions with paper towels or air dry.
In a pot, add oil (add enough so that when the scallions are added, they are fully submerged in oil) and turn to high heat.
Add in the scallions into the pot.
Turn the heat down to medium.
Fry for ~30 minutes (or until scallions are browned), occasionally stirring to make sure the heat is evenly distributed.
Use a strainer to take out the fried scallions. While these are cooling (and getting crispy), you can season the oil in the pot:
Turn the heat down to low. Add soy sauce and sugar to taste.
Add the fried scallions and seasoned oil on top of a bed of cooked noodles.
Mix and enjoy.
I love scallions because they add a lot of flavor to a dish, but they aren't super overpowering like garlic and ginger. This is a dish that highlights how much flavor scallions can bring. I particularly like this recipe because you can store the fried scallions and oil in the fridge for several days, making this recipe convenient if you need a quick meal.
