Seared Scallops with Lemon Butter
Scallops: 4
Butter: 2 tbs
Cooking oil: 1 tbs
Salt: to taste
Pepper: to taste
Lemon juice: 1 tbs
Thaw and dry scallops with a paper towel.
Apply salt and pepper to both sides of scallops.
Add a 1:1 ratio of cooking oil and butter (1 tbs of each) into a pan.
After the pan is hot, place the scallops into the pan.
Sear each side of scallop for 90 seconds.
Plate the scallops, leaving behind the juices in the pan.
Take the pan off the heat, then add 1 tbs of butter and 1 tbs of lemon juice into the pan to create the lemon butter sauce.
Add the lemon butter sauce to the plate with scallops.
