Rack of lamb
Black pepper
Salt
Coat the entire rack (top, bottom, sides) generously with black pepper and salt.
Wrap over the top with aluminum foil.
Bake for 10 minutes at 450 degrees Fahrenheit.
Take off the top aluminum foil and bake for another 10 minutes to develop crust. If you prefer rarer lamb, then reduce this down to 5 minutes.
I like to use a cooking torch to add some additional sear at the end.
