Peanut Soymilk
Note that this recipe does require special cookware that the average kitchen probably doesn’t have.
Soybeans: 4 tbsp of dried soybeans. Soak in water overnight.
Roasted peanuts: 1 tbsp.
Water: 1300 mL.
Sugar: 1 tbsp.
Add the soybean, peanut, and water into the soymilk machine. Press hot drink then start. This will take 40 minutes.
Add sugar the end.
Soymilk is a popular breakfast food in Taiwan. Whenever I have soymilk, I am reminded of my time in Taiwan as a kid. Specifically, I remember sitting on a moped with my parents as we rode from our house to a local breakfast cafe. We lived deep in the city, so I’m reminded of the sound of traffic and people, and I remember the smell of car and moped exhaust as we find a table outside to drink our soymilk and eat our breakfast egg crepe.
I am also reminded of the Wisconsin winter because I would often drink warm soymilk during those cold winters. I recall the tingling in my throat and in my fingers as I sip the soymilk in the kitchen before leaving to shovel the snow outside.
