Instant Pot Salmon and Rice
1 cup of white rice
1 cup of quinoa
2 salmon fillets
2 cloves of garlic
1 whole onion
1 carrot stick
1 rib of celery
4 tablespoon butter
3 teaspoon salt
2 teaspoon black pepper
1 cup chicken broth
Set instant pot to saute mode.
Add all the butter and add the chopped garlic and onions into the pot. Stir fry for 2 minutes.
Add all the remaining chopped vegetables into the pot. Stir fry for 15 minutes.
Wash the rice and quinoa, drain, and then add to pot.
Add chicken broth.
Add all the salt and stir.
Place salmon fillets into the pot, season with pepper and salt.
Close the instant pot and let it cook at high pressure for 20 minutes.
Let the pressure release and you can easy right away or top with some lemon powder/juice.
