Hummus
1/4 cup tahini (well mixed Chinese sesame paste also works)
1/8 cup lemon juice
2 tablespoon olive oil
1/2 teaspoon cumin
1 can drained chickpeas
Blend the tahini with lemon juice first.
Then add everything else and blend.
Add cold water and blend until the desire consistency.
Season with salt to taste and add extra olive oil on top for improved color.
Hummus is such a velvety dish with so much history. I remember it was a dish that I really wanted to like because it seems so healthy and been around for centuries. However, I just couldn't bring myself to like the store bought hummus because it had a sour taste from the citric acid that is typically added. This inspired me to try making it on my own, and I'm so glad I did because I think this homemade recipe is do delicious.
