Green Laver Fried Rice
Rice: Preferably white rice that has been refrigerated overnight. This will ensure that the rice is loose.
Garlic: Minced fresh garlic or garlic powder.
Green laver: 1 cup of cut dried laver. Dried laver can be difficult to cut. You can also briefly soak the laver which will make the laver easier to cut, but the texture will be a bit more slimy.
Green onions: 1 cup
Seasoning: White pepper and salt to taste, or soy sauce. The laver will already be salty, so not a lot of additional salt is needed.
Cooking oil: 2 tbs.
I also add carrots sometimes.
Basically, cook fried rice as you would normally cook it and then just add the laver in at the end. Please see the “Egg Fried Rice” recipe for details.
I grew up eating seaweed, but it wasn’t until I saw a food documentary that I realized that the seaweed I normally eat has a specific name: “green laver.” I think green laver is a really pretty ingredient. When it's dried, it appears black yet gives off a vibrant shine. When it’s soaked, it becomes a dark translucent green.
